Gluten Free Savory Chicken


gluten free chicken
(Serves 6)
INGREDIENTS:
  • 3 organic, cage free chicken breasts, pounded to 1/4 inch thickness (cut the breasts in half)
  • 1 cup quinoa flour
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 3 cloves garlic
  • 1 lemon sliced thin
  • 1 squeezed lemon
  • 1 T maple syrup
  • 1/4 cup fresh thyme
  • 1/4 cup capers
  • cracked pepper
  • sea salt
INSTRUCTIONS:
Salt and pepper the cutlets and roll them in flour Add olive oil and garlic in the frying pan, then remove the garlic once it browns. Now saute the chicken in the yummy garlic olive oil, for 3 mins on each side and then set the slightly browned chicken breasts aside. Then add the breasts altogether in the frying pan, lowering the heat slightly, and add the white wine, turning the chicken and scraping the bottom of the pan to distribute the bits. Now add the maple syrup. Next add lemon juice and turn the cutlets over, simmer on low heat. Remove chicken and place on serving dish. Sprinkle thyme, capers, salt and pepper. Add lemon slices and pour the contents in the frying pan over the cutlets. Serve with potato wedges and a fresh green salad.
