- 1/2 head cauliflower (2 cups finely chopped)
- 1 beaten egg
- 3 T fresh chopped basil
- 1 clove minced garlic
- 1 cup mozzarella cheese (fresh and thinly cut into tiny pieces or shredded)
- 1 t sea salt or Himalayan pink salt
- 1 T oregano
- toppings of your choice
Preheat Oven to 450F
Grease a pizza tray or cookie sheet. Can also grease a sheet of aluminum foil. Chop cauliflower (no stems or leaves) into small pieces and put in food processor of choice (Vitamix, Cuisinart, Nutribullet whatever you prefer) and blend until the cauliflower is the texture of rice. Then sauté it in a pan for 8 minutes. In a bowl mix the cauliflower with the garlic, basil, oregano, cheese, egg and salt.
Now roll the dough out onto the baking sheet @ ¼ inch thick x 10 inches diameter. Bake for 25 mins- crust should be golden and slightly crispy on the edges. Remove from oven and add tomato paste, sprinkle cheese and toppings of your choice (sliced cherry tomatoes, sun-dried tomatoes, fresh basil leaves, black olives) and put it back into the oven for 5 minutes until cheese melts. Then cool it for a few minutes before cutting.
