Raw, Fermented Cucumber Salad


INGREDIENTS:
4 cucumbers
1 thumb sized piece of ginger
7 T Bragg's raw apple cider vinegar
2 T balsamic vinegar
1 t Himalayan pink salt
2 T raw honey
5 T olive oil
1/4 t black pepper
Option to add dill and black sesame seeds

INSTRUCTIONS FOR PREPARATION:
The size of these veggies varies, so make your own estimations. This is a little of this and a little of that kind of recipe. I like to shave the veggies using a parer so that I get really thin slices. Can also use a cheese slicer, which which works great for the cucumbers. Add the condiments to taste. I prefer that this salad be a bit wetter as opposed to skimping out on the dressing. Raw ACV is fermented and contains malic acid, and also alkalizes the body, so be generous. Can add superfood powders as well! This salad makes a wonderful partner to holiday dishes as it is light, refreshing and will help break down fatty foods. It's the perfected fermented side!
